Pineapple Pudding Cake Recipe

Serves 4 to 6

  • Pineapple Pudding Cake1 package of Duncan Hines yellow pudding cake mix
  • 3 Egg-Land’s Best eggs
  • 2 tablespoons of carnation milk
  • 1 cup of spring water
  • ½ teaspoon of pure ground nutmeg
  • ½ teaspoon of vanilla extract

Canola spray

  • 1/3 stick of Smart Balance Butter Blend
  • Cream cheese frosting
  • 1 small can of cut pineapple

Instructions

  1. Melt butter blend slowly on low heat, spray baking dish or pan, set aside before adding pie mixture.
  2. Add all ingredients to blender; mix on puree blend for one minute, then mix on blend for an additional minute.
  3. Add all ingredients to baking dish, bake for 30 to 35 minutes.
  4. Remove pudding cake from oven, let cool for 5 minutes. Slice in half – turn one side upside down, add pineapples on top of bottom half of cake, and then place other half on top.
  5. Begin to add cream cheese icing on top of pudding cake, spread the remaining cream cheese icing around the sides of the cake. Place pudding cake in the refrigerator to maintain freshness of pineapples and cream cheese icing.

  • 4 Roma or other Italian-type tomatoes
  • 1 handful large-leaf basil
  • 1-half head of Romaine or loose-leaf type lettuce
  • Optional: 1 clove garlic (use elephant garlic for a milder taste)

Push garlic through the juicer first and then follow with lettuce, basil, and tomatoes. Makes 2 servings. If desired diluted, place ice cubes in juice.

Boost Health and Vitality with Fresh Juices

With fresh fruit and vegetable juices, you are able to start the new year rejuvenated and full of energy. Making juices yourself at home enables you to concentrate vitamins and minerals from heaps of produce into a refreshing drink. While fiber is excellent for your health in general, juicing actually removes the fiber, allowing the vitamins and minerals to enter your bloodstream fast. The sugars enter quickly, too. I like to water down all my juices (which are usually a combination of fruits and vegetables) so they are not too sweet.

The Center for Disease Control recently updated it’s recommendation of “Five Fruits and Vegetable Servings a Day” in recognition that we all have different body types and needs. However, fresh fruits and vegetables are vital in all of our diets, and the CDC now often recommends more than five, based on age, gender, and level of activity. Juicing is a great addition to any diet, allowing you to easily get your servings of fruits and vegetables every day.

Some people even embark on juice fasts (or juice feasts), in which they drink only fresh fruit and vegetable juice for a given time: I’ve completed one for 42 days! When only drinking juices for a long period of time, it’s important to drink a lot of vegetables, especially green leafy vegetables, which contain a lot of minerals and protein. Having celery in juice is important, too, as it contains natural sodium which allows your nervous system and brain to continue to function at it’s best.

Juices can be made at home in a variety of ways. First, you can purchase a juicer such as a Jack Lelane or the more expensive Champion or Green Star. Or you can use a blender and then strain it to remove the pulp (fiber). The ingredients should be very well blended, I usually add a bit of water to help things blend better. Then strain through a jelly bag, cheese cloth, or even a paint straining bag, which can be picked up at a hardware store for just a couple dollars.

Here are a few of my favorite juice recipes which have come from my juice feast and beyond:

Winter Warmer

  • 3 Apples
  • 3-5 Carrots
  • 1/2 cup fresh Cranberries
  • 1 inch knob of Ginger

Wild Earthy Juice

SmoothieI love to harvest wild edible plants, and the following juice contains burdock root, which can be harvested anytime the ground isn’t frozen, as long as the plant leaves are green and hasn’t shot up a flower stalk (or is dead and brown with burrs.) But it’s also sold at health food stores and Asian markets (where it is sometimes known by it’s Japanese name, Gobo)

  • 3 inch piece of burdock root
  • 3 apples
  • half lemon, (with peel if organic)
  • 1 inch ginger

Tabouli Juice

When I was on my long term juice feast, I craved savory juices, and so made juices based on my favorite dishes, which is how I came up with this one:

  • 2 Tomatoes
  • 4 stalks Celery
  • 1/2 Cucumber
  • handful fresh mint leaves
  • handful Parsley
  • 1/2 Lemon (with peel if organic)

How to Make Homemade Butter in a Blender

Genuine butter is extremely tasty, and after eating it instead of margarine, it is hard to go back. No matter how hard margarine and spread manufacturers have tried to replicate the texture and taste, anything less than the real thing is not nearly as good. It is possible to make homemade butter without an old-fashioned churn, and although it really does not save money unless you live on a dairy farm and have access to inexpensive cream, the fresh flavor and creamy texture cannot be beat.

Try the following easy way to make homemade butter, and enjoy it on everything from toast to hot veggies.

Necessary Supplies for Homemade Butter

To make homemade butter you will need:

  1. one-cup of slightly warmed heavy cream for whipping (at least 36% fat),
  2. one-eighth teaspoon of salt (if desired),
  3. an electric blender,
  4. a spatula, a wooden spoon to press the buttermilk from the homemade butter,
  5. a cool shallow bowl to use as a press,
  6. a container with a lid for storage.

You might also want to have a container ready for storing the small amount of buttermilk that will form during the process. The liquid can be used in homemade pancakes, biscuits, or enjoyed alone. In any case it is worth saving since it is full of nutrients, no matter how small the amount.

How to Make Butter in a Blender

How to Make Butter in a BlenderIf warming the cream in a pan on the stove, keep the heat low, and stir it constantly to prevent scorching. It should only reach about fifty-five to sixty degrees Fahrenheit when preparing to make butter. A thermometer helps, but it is not required. The cream is ready to use when barely lukewarm to the touch.

  • Begin with a clean dry electric blender. Add the slightly warmed heavy cream and salt (if desired), and begin blending it on high speed. Be sure the lid is firmly in place.
  • Within just a few minutes the slightly warm cream will begin to thicken in the blender, but do not give up on trying to thicken the liquid. It takes approximately fifteen minutes to make homemade butter in a blender.
  • Stop blending every few minutes, and push the thick cream down from the sides with a spatula. The homemade butter will begin to look grainy and begin to separate into a liquid and solid form. In time it will condense further and form thick, recognizable homemade butter.
  • Once a mass of homemade butter forms in the blender, remove it with a spatula, and place it in a cool shallow bowl. It will seem more like homemade spread, but this is normal before refrigeration. Once it is refrigerated, the homemade butter will harden and look more like the varieties found in stores.
  • With the homemade butter in the cool shallow bowl, begin pressing out any remaining liquid with a wooden spoon. Tip the bowl to one side, and pour the buttermilk into a container along with any liquid that was left behind in the blender.
  • Pat the homemade butter dry with a paper towel when finished, and store it in a container with a tight-fitting lid. Alternately, the butter can be pressed into a decorative mold.

I advise blenders Vitamix brand. They are powerful and easy to use. Enjoy the homemade butter immediately as a spread, or refrigerate it until ready to use. Chances are it will not last long!

Raw Food Diet Recipes for Beginners

Beginning any new diet can be very difficult. It requires planning, preparation, and tracking in order to stay focused on your goal and not lose you will power. On top of that, a new diet means teaching yourself new habits and breaking old ones. Sometimes the requires a complete overhaul of your current eating habits, and sometimes it doesn’t. The hardest thing about many diets isn’t figuring out what not to eat, it’s figuring out what to eat instead. Many people give up on diets because they simply don’t know what to replace junk food with, or they get bored quickly with the few menu options they do know.

Raw Food

All diets require variety, it is the spice of life you know.

The raw food diet is no different. I can’t tell you how many times I wanted to quit because I just couldn’t figure out what to make and was sick to the teeth of apples. I finally purchased a raw food diet cookbook and reached out to online forums for some recipe idea to keep me going.

In any diet change, I recommend you start slow. Replace your daily snack with fresh fruit for a week, then move on to replacing soda or coffee with fresh juice and smoothies and so on. Going cold turkey makes it that much more difficult to stick with it, so just move slowly. Here are 4 very simple recipes you can try to get started.

Fruit Medley Cereal

  • 2-3 strawberries, diced
  • 1 half handful of blueberries,
  • 1 half handful of raspberries,
  • 1 kiwi, diced

Milk:

  • 1 banana
  • ½ cup coconut milk or water

Prepare fruit and place in a bowl. Blend banana and coconut milk (or water) until you get the consistency of milk. Pour milk over berries and enjoy. You may adjust the amount of liquid to get the consistency you like. I like mine a little thick.

Summer Afternoon Smoothie

  • Summer Afternoon Smoothie1 cup fresh orange juice(usually about three oranges)
  • 1 cup fresh cantaloupe or other melon juice
  • 1 cup fresh spinach
  • 1 cup frozen chopped bananas
  • Ice (optional)

Blend all ingredients in blender until smooth. Add ice if you’d like a Jamba Juice smoothie consistency.

Green Lunch Salad

  • 1 cup spinach, torn
  • ½ cup diced tomatoes
  • ½ sliced cucumber

Dressing:

  • 1 cup fresh cilantro
  • ½ cup fresh lime juice
  • 1 small garlic clove
  • Pinch of salt
  • 1 cup olive oil

Prepare the salad and lightly toss in a bowl. Blend cilantro and garlic in food processor, then blend in oil and lime juice. It helps to store the dressing in a separate container and put it on the salad just before you eat.

Better Fettuccine Alfredo

Noodles:

  • 3 Zucchinis, peeled

Use a vegetable peeler down the length of the zucchini to make long, flat fettuccini-type noodles, until you reach middle with seeds. Discard the center or use for another recipe.

Alfredo Sauce:

  • 1 cup macadamia nuts (soaked overnight)
  • 1/4 c walnuts (soaked overnight)
  • 1/4 cup cold pressed olive oil
  • 2 tsp sea salt
  • 2 cloves garlic
  • 2 tsp fresh ground pepper
  • water for sauce consistency

Blend all ingredients in processor or high power blender. Pour sauce over noodles.
*You may also wish to add 1-2 mushrooms sliced and sauteed in a bit of garlic, basil and light olive oil. Place them on top of your fettuccini or stir them into the sauce.

Even replacing 3 dinners a night with raw food dinners is a great start. Once you become used to the preparations and begin to see weight loss, you can move to replacing breakfast. However you decide to start, there is lots of help for you online or in your local bookstore so stay with it!
